1. 개요

익히지 않은 해산물과 채소를 소스에 버무려 만드는 하와이의 전통 음식으로, 한 마디로 정리하면 생선회가 들어가는 샐러드다. 포케는 하와이어로 '자르다', '십자형으로 조각내다'라는 뜻이다.

깍둑썰기한 생선회를 소스에 절인 뒤 각종 채소와 견과류를 곁들여 먹는다. 에피타이저나 메인 디시로 먹으며, 메인 디시로 나올 경우 밥 위에 얹어 먹을 수도 있다. 그릇에 밥을 함께 담아 파는 경우 포케 보울(bowl)이라고 부르기도 한다. 익혀서 반찬으로 먹기도 하는데, 간이 이미 되어 있으므로 팬에 기름을 두르고 익히기만 해도 된다.

2. 상세

고대로부터 하와이를 비롯한 오세아니아에서는 생선회를 먹는 문화가 있었는데, 기후가 무더운 탓에 생선을 소금이나 이나모나, 리무 등에 무쳤다. 이후 서양인의 정착이 늘어나면서 보다 다양한 야채가 전파되자 양파를 비롯한 다양한 채소를 곁들여서 무쳐 먹게 되었으며, 19세기 말부터 20세기에 걸쳐 중국인, 일본인, 중국인, 필리핀인 등 아시아인이 대거 들어오자 전통적인 재료 대신 간장과 참기름으로 무치는 등 동아시아식 회 요리의 영향도 받게 되었다.

2010년 초반에 미국에서 폭발적인 인기를 얻어 2020년대에 들어서는 어지간한 도시에서 포케를 파는 곳을 어렵지 않게 찾아볼 수 있는 정도가 되었으며, 캐나다에서도 2010년 중후반부터 인기를 끌기 시작했다. 이에 따라 현지화가 이루어졌는데, 원래는 참치회를 쓰지만 연어, 방어, 대구 등 다양한 생선을 쓰게 되기도 하고 정반대로 생선은 전혀 들어 있지 않은 경우도 있다.

포케를 취급하는 대부분의 가게에서는 써브웨이처럼 손님이 원하는 대로 재료를 마음껏 조합할 수 있도록 하며, 추가 요금을 지불하면 원하는 재료를 조금 더 넣어 주기도 한다.

2023년부터 한국에서 샐러드 열풍이 불면서 샐러드 전문점이 많이 생겨났고 포케 전문점도 많이 생겼으나, 하와이식이 아니라 미국에서 현지화된 버전이 유입되다 보니 엄밀히 말하면 포케라고 하기 어려운 메뉴를 파는 곳도 드물지 않다. 더 나아가, 한국에서는 비교적 생소한 요리다 보니 마케팅 차원에서 뭔가 있어 보이는 낯선 용어를 쓰고 싶다는 이유로 생선은 한 조각도 들어 있지 않음에도 불구하고 포케라고 이름 붙여 팔기도 한다.

3. 다이어트 식단?

채소에 연어나 닭가슴살 등의 단백질, 현미밥이나 퀴노아 같은 곡물을 조합해서 먹기에 채소 샐러드보다 영양 균형이 우수하며 포만감이 오래 간다. 간식 섭취를 줄일 수 있으므로 결과적으로 일일 칼로리 섭취를 낮출 수 있다는 점에서는 다이어트 식단이라고 할 수 있다.

다만 토핑이나 소스에 따라 다르지만, 포케 자체의 칼로리는 500~700칼로리 정도로 다른 식사거리와 비슷하거나 살짝 낮은 정도다. 특히 참깨 소스나 스리라차마요 소스 등 칼로리가 뛰어오르는 것들이 일부 있으므로, 다이어트 식단으로 먹고자 할 경우 주의해야 한다. 토핑과 소스 등을 포함하여 칼로리 계산을 할 수 있도록 칼로리 계산기를 제공하는 가게도 있다.

하와이인이 전통적으로 사용해 온 재료는 문어, 가다랑어, 참치이며, 특히 이 중에서도 참치를 넣은 것이 가장 기본적인 형태로 취급된다. 하지만 이건 어디까지나 전통 재료일 뿐이고, 포케가 많이 대중화된 2020년대부터는 어울릴 법한 재료라면 이것저것 다양하게 들어가는 편이다. 전술했듯이 동아시아식 회 요리의 영향도 받았다 보니, 와사비나 후리가케 등 일본 재료도 들어간다.

한국에서는 참치가 비싸다 보니, 그 대신 연어, 스테이크, 새우 등을 많이 판다.
