1. 개요

포크(fork)는 끝이 두 갈래 이상 갈라진 꼬챙이 형태의 커틀러리 식기이다.

형태는 대체로 3~4개 정도의 갈래로 되어있다. 초기의 포크는 고깃덩이를 요리하고 먹기 위한 도구로 갈래가 두 개였지만, 한쪽 축을 중심으로 고기가 빙빙 돌게 되는 문제점이 생겨 개량을 거친 끝에 19세기가 되어 네 갈래 포크가 가장 이상적이고 표준적인 포크로 자리 잡았다.

2. 사용법 및 용도

손으로 집고 찍어 먹는 데 쓴다. 음식을 위에 얹어 먹을 수도 있다. 파스타 등을 돌돌 말아서 먹기도 한다.

표준적인 서구 식문화에서는 대개 테이블 나이프(+스푼)와 쌍을 이룬다. 나이프로 썰고 포크로 찍어 먹는 식이다. 이때 어느 손으로 나이프를 잡느냐는 문화권에 따라 약간의 차이가 있다.

고급 레스토랑에서는 코스별로 포크를 따로 쓰기도 하며, 대체로 바깥쪽 포크부터 순서대로 쓰게 된다.

3. 역사

3.1. 고대

고고학적으로는 아프로-유라시아 대륙 전역의 고대 문명 유적지에서 원시적인 포크 형태의 도구가 발견된다. 중국 치자 문명(기원전 2천 년경, 齊家)에서 사용한 뼈로 된 포크가 발견되기도 하였고, 후한 시대 무덤에선 돌로 조각한 포크가 발견되기도 하였다.[1] 고대 이집트에서는 포크를 조리 도구로 사용하기도 하였다. 고대 로마에서는 은으로 포크를 만들기도 하였다. 영어 단어 'fork'는 라틴어 'furca'에서 유래하였는데, 쇠스랑을 의미한다. 고대의 포크는 용도가 다양하였는데, 주로 조리 도구로 사용되었다.

포크를 식사용 도구로 처음 쓰기 시작한 때를 고대 로마, 정확히는 4세기 로마 제국으로, 포크가 대중에게 보급되고 여러 지역에 전파될 수 있었던 것은 동로마 제국의 공이 크다. 4세기에는 동로마 제국 전역의 식탁에 포크가 오를 정도로 널리 퍼졌다. 가까운 근동과 페르시아로도 포크 문화가 전파되어, 9세기에는 중동 지역에서도 널리 쓰이는 식사용 도구가 되었다. 다만 고대 로마 시대의 연회 등을 그린 그림을 보면 로마인들도 맨손을 음식을 집어 먹기는 매한가지였다.

3.2. 중세

서로마 제국 붕괴 이후 서유럽에서 포크 문화는 사라지고 게르만족의 수식(手食) 문화가 자리 잡았다.[2]이런 과거 유럽의 흔적은 현재도 곳곳에 남았다. 특히 지금도 유럽 식사법에서 주식인 빵만큼은 포크나 나이프를 쓰지 않고 손으로 떼어 먹는 것이 기본적인 식사 예절이다.[3] 또 격식이 있는 유럽의 고급 레스토랑에서는 식후에 핑거볼(finger bowl)이라고 하여 손가락을 씻는 물이 담긴 그릇을 식탁에 내놓는데, 옛날 유럽식 식사 예절의 흔적이다. 중세 시절부터 유럽에서는 음식을 모두 손가락으로 집어 먹었고, 그래서 식사를 마친 후 음식이 묻은 손가락들을 핑거볼에 넣고 씻었다.[4]

포크가 다시 서유럽 세계로 전파된 것은 베네치아 공화국을 통해서였다. 10세기 동로마 제국의 중흥기를 만든 황제 요안니스 1세의 조카 테오파노가 신성 로마 제국의 오토 2세의 황후로 갈 때 포크가 서유럽에 다시 소개되었는데,[5] 이렇게 전해진 포크는 11세기 이후 베네치아 공화국을 통해 이탈리아반도에 널리 보급되었다.

이탈리아가 이렇게 고대 로마의 문화를 중흥하는 와중에도 프랑스, 영국, 독일, 스페인 등 다른 서유럽 국가에서는 여전히 사회적으로 포크를 꺼렸다. 가령 베네치아 총독의 후계자 도메니코 실비오(Domenico Silvio)가 동로마 공주 테오도라와 결혼했을 때 테오도라가 포크를 가져 왔는데, 이를 보고 페트루스 다미아니(Petrus Damiani) 주교가 강력하게 비판하여 일련의 스캔들이 될 정도였다. 문학 작품을 봐도 포크에 대해서 '이탈리아 놈들이나 쓰는 것' 혹은 '계집애들이나 쓰는 것'이라 폄훼했다. 일부 교회학자는 하느님이 주신 손은 본질적으로 깨끗하기 때문에 포크를 써서 식사하는 것은 과도한 섬세함이라고 비판했다. 다만 가톨릭의 총본산인 이탈리아에서는 잘만 썼는지라 교리 차원에서 일치할 정도로 중요한 문제는 아니었고, 각 지역마다 다른 문화를 각지 성직자들이 성경을 끌어와서 정당화한 상황으로 이해해야 한다.

이후 중세 서유럽 지역에 포크는 곳곳에서 등장하지만 실사용보다는 과시용에 가까웠다.

1363년에서 1380년까지 재위한 프랑스의 샤를 5세가 남긴 재산 목록에는 금과 은으로 만든 포크도 포함되어 있었지만, 그것은 식사용이라기보다는 과시용에 가까웠다.
1533년 이탈리아의 메디치 가문의 카트린(Caterina de' Medici)이 프랑스의 앙리 2세에 시집가면서 자신의 요리사들과 모든 식탁 도구들을 함께 가져간 것을 계기로 프랑스에 소개된 바 있지만 대중적으로 확산되기까지는 약 1세기라는 시간이 필요했다. (중략) 17세기경 이탈리아 일부 사람들이 포크를 쓰기 시작했지만 항간의 조롱거리에 불과했다.[6] 특히 남자가 포크를 사용하면 까다로운 성격을 지닌 사람 또는 여자 같다는 말을 들었다.

3.3. 근세의 보편화

다만 다른 유럽 지역으로 퍼지기는 상당히 늦었다. 15세기면 지중해 국가들에서는 일반적으로 사용되었으나, 영국과 프랑스, 독일 등에서는 16세기 이후에 서서히 도입되었다. 당시까지도 사람들에겐 포크 사용을 기피하는 풍조가 있었다. 한 예로 1608년 영국인 토머스 코리어트(Thomas Coryate)가 유럽을 돌아다닌 여행기를 편찬했는데, 여행하며 포크 문화를 배워 영국에 알린 탓에 퍼시퍼(furcifer), 즉 포크잡이라는 조롱 섞인 별명이 붙었다.

프랑스 왕국에는 17세기에도 보급이 덜 되어 루이 14세가 식사 때 자신은 손과 칼 외에는 다른 건 써본 적 없다며 다른 황족들도 포크를 못 쓰게 했다고 한다. 당시 포크를 사용하면 남자답지 못하다 여겼다고.[8] 전 유럽에서 포크를 사용하게 된 때는 적어도 18세기 이후이다. 아메리카 대륙에서 포크가 대중화됨도 18세기 후반 미국 독립운동 이후의 일이다.
