3. 특징

미국에서는 TV 광고까지 했다. 1979년 1월 25일 워싱턴 포스트 소개 기사 기사에 따르면 이 책은 당시 4개 언어로 출판될 예정이었으며[4], 구독자에게는 7.95달러, 서점에서는 더 높은 가격에 판매했다고 한다. 후술할 한국어판과 일본어판 가격을 당시 환율로 환산한 것을 보면 15~17달러 상당에 판 것으로 추정.[5]

일본인 독자의 증언에 따르면 이 책에 나온 레시피는 대체로 '묵직하고, 진하며, 중후함이 감돈다'고 한다. 정황상 누벨 퀴진 이전 프랑스 요리 스타일을 고수한 걸로 보인다. 또 요리 과정의 사진 해설이 매우 상세하고, 내장 요리나 사냥 고기 같은 꽤 전문적인 내용도 있어서 (적어도 일본에서는) 후대의 전문 요리사들조차도 여전히 많이 찾을 정도라고 한다. #

4. 외국어 번역

4.1. 한국에서

대한민국에서는 1983년 12월 15일 한국 타임라이프[6]에서 영국판 베이스로 세계의 일품요리 시리즈로 번역 출판됐는데, 가격이 전 10권에 12만 원, 즉 1권에 1만 2,000원[7]이었다. 1984년 한국 평균 월급이 29만 7,000원도 되지 않았던 시절에 저 정도면 단권조차 하루 일당의 1.2배, 전집은 무려 12일치 일당을 내야 살 수 있던 책이던 셈이다. 원책은 소책자 1권도 포함해 29권이었으나 한국에서는 서양 요리에서 가장 기초적인 수준인 단 10권 빼고[8] 통째로 삭제되며 처참히 반토막났다. 덤으로 한국어 번역본은 한국인 감수자가 단 한 명도 없다.

무시무시한 가격답게 요리 난이도도 당대 한국에서는 극악이었다. 대형마트도 편의점도 없고 롯데백화점 본점 [9]도 4년밖에 안 된 신흥 백화점이었던 데다가 현대식 고급 호텔도 초입기였으며[10] 바나나도 귀하고 패스트푸드도 귀했으며[11] 돈가스조차 기념일용 음식 취급받던 시절[12][13] 슬라이스가 아닌 진짜 유럽 스타일의 치즈, 버터[14]를 넘어 생크림, 올리브유, 허브[15]처럼 당시 한국에서 구하기 매우 어려웠던 것들을 태연하게 언급하고 있으며, 요리법 역시 전자레인지 보급률이 (1984년 기준) 2.3%로 매우 낮았으니[16] 상류층이 아니고서야 요리하는 것 자체가 완전히 불가능했다.[17] 애초에 태생부터가 미국 중산층을 겨냥한 책이었으니 한국인 입장에서는 전혀 이해할 수도 없는 언급들이 가능했던 것이다.

이 책이 얼마나 무시무시한 책이었는지는 당시 한국의 요리책 인프라가 얼마나 척박했는지부터 이해해야 한다. 한국은 1987년 이전 한국인이 쓴 케이크를 위시한 서양식 디저트 요리법만을 전문으로 다룬 요리책[18]이 1981년 뜬금없이 황혜성[19]이 계몽사에서 '컬러판/가정요리전집' 5권으로 쓴 <빵•과자•디저트>, 같은 1981년 전희정[20]이 삼성출판사에서 출판한 카드전집 중 <케이크•쿠키•페이스트리> 1권[21], 그리고 1982년 똑같은 삼성출판사에서 나온 <삼성가정요리 990선>[22]의 7권 <엄마가 만드는 케이크와 쿠키>[23]와 8권 <디저어트 30선>[24] 이렇게 실질적으로는 단 3종[25] 가량이 전부였다.

디저트 요리책도 저 정도였으니 정통 서양식 요리책은 더 처참했다. 물론 삼성출판사 카드전집을 논외로 하더라도 하선정, 왕준연(王晙連, 1918~1989), 황혜성 같은 요리연구가들이 쓴 요리전집 목적이든 독자적으로 썼든 서양 요리책들은 진작부터 출간되고 있었으며, 특히 또 황혜성과 윤서석[26], 정순자[27] 3명이 1977년 개풍출판사에서 출판한 세계의 요리대전집(전 6권) 중 2권 <프랑스·이탈리아·남구(南歐)>에서 프랑스, 이탈리아 등 유럽 국가들의 요리를 다루며 한국 최초로 프랑스, 이탈리아 요리를 전문적으로 다룬 책으로 남게 되었다. 그러나 이 책은 90페이지 미만에 세로쓰기는 기본이고 본문 내에는 흑백 사진만 실린 나사 빠진 수준이었고, 프랑스 요리가 대중들에게 널리 알려지게 된 계기도 1987년 역사 학습만화 먼나라 이웃나라 프랑스편[28]이 출판된 후이다. 이러던 마당이니 한국에서 처음 프랑스 요리 전문 요리책이 나온 해도 1991년,(#), 이탈리아 요리 전문 요리책이 처음 나온 해도 1994년(#)일 정도다.[29]

이런 상황 속에서 세계의 일품요리는 책별로 보면 수프라고는 경양식집 노란 수프[30]만 있던 시절에 크게 잡아도 네 종류[31]의 수프를 다뤘고, 야채 요리도 여덟 가지 조리법[32]을 다뤘으며, 고기 요리 역시 고기별로 대여섯가지 조리법에,[33] (서양식) 디저트도 버터케이크가 대세이던 시절[34] 셔벗과 정통 아이스크림 조리법을 다룸과 동시에 수플레와 푸딩을 '만드는 법은 비슷하면서도 맛은 대조적'이라고 묘사했고, 심지어 달걀 요리법도 크게 세 종류[35]를 다뤘다. 심지어 이조차 원판에서 반토막난 "일부" 내용에 한한 것이다.

때문에 서양 정통 요리 레시피를 / 풀컬러 사진을 곁들인 레시피로 상세하게 설명해준 후 / 뒷면에 전 세계 각지의 레시피들까지 결들이고 / 이런 책이 재료랑 종류별로 무려 10권 전집[36] 구성 / 삼성가정요리 990선의 심화판 같은 느낌이란 걸 알게 된 당시 한국인들의 놀라움과 '이런 걸 매일 먹으며 살 것처럼 보이는' 서방 선진국에 대한 부러움은 형언할 수 없을 것이다.

그래도 중고 사이트에 풀린 물량이 확인된 것만 도합 10여 종 가량 된다는 걸 감안하면 당시엔 나름대로 팔린 듯하다.[37]

참고로 1984년 당시 한국의 1인당 GDP는 2,469달러로 세계 평균(2,614달러)의 94.5% 가량이었으며, 말레이시아(2,300달러), 쿠바(2,386달러)보다는 높았지만 남아프리카 공화국(2,504달러), 멕시코(2,506달러), 포르투갈(2,523달러), 알제리(2,524달러)보다도 낮았다.

4.2. 일본에서

일본에서는 완결 직후 1981~1982년 세이부타임[38]에서 그냥 더 굿 쿡(ザグッドクック)이라는 제목을 달고 영국판 베이스로 26권[39]을 번역했는데, Outdoor Cooking(야외 요리) 단 한 권만 빼면[40] 모든 책이 번역 출판되었다. 일본어 번역본 전집 사진 일본판 시리즈 총괄 감수는 제국호텔 조리장 무라카미 노부오(村上信夫, 1921~2005)[41]가 맡았고, 책별로 별개의 해당 요리 전문가들이 감수했다.[42]

하지만 당시 현해탄 하나 사이에 있는 한국과 일본의 서양 요리 인프라는 거의 다른 대륙 수준으로 달랐다. 일본의 전자레인지 보급률은 1983년 기준 40%였고 오븐 보급률도 그 5년 전인 1978년부터 이미 2인 이상 세대에만 한정해도 100세대 중 45대를 찍을 정도로 조리 인프라도 널리 보급되었으며, 덤으로 무라카미 노부오가 NHK 오늘의 요리 메인 강사로 활동하고 츠지 시즈오가 츠지 전문학교를 세운 후 서점에 프랑스 요리책들을 도배(...)하면서 대중들에게 프랑스 요리 개념이 친숙해진 것은 물론이고 1982년 루이 14세 이래로 내려오던 디저트 가게 달로와요가 도쿄에 해외 최초로, 1984년 프랑스의 (당시 기준) 300년 전통 식당 라 투르 다르장이 호텔 뉴 오타니 도쿄에 해외 유일 진출한 것으로 미루어보아 서양식 기본 식재료 유통의 광범위함과 민간인의 입수 난이도도 한국과 비교 불가 수준으로 낮았다는 것도 안 봐도 뻔하다.

정통 서양식 요리책 인프라 역시 한국과 비교불가였다. 무라카미 노부오와 츠지 시즈오의 활약은 기본에 1978년부터 1981년까지는 산요에서 '계간 프랑스 요리(季刊フランス料理)'라는 계간지를 출판했고, 1981년부터 1999년까지 '셰프 시리즈(シェフシリーズ)'라는 서양 고급 요리 전문 시리즈 간행물도 출판되었으며, 이후 일이긴 하지만 1987년에는 서양식 연회 백과사전격인 연회요리대전(宴会料理大全, 전 7권. 감수자 중 한 명이 무라카미 노부오다)도 나왔다.[43] 전문가용 서적조차 이 정도로 즐비했으니 당시 일본에서 서양 요리책이 흔했음은 안 봐도 뻔하며, 때문에 당시 일본에서는 손이 많이 가지만 보기 좋은 서양식 요리와 본격적인 디저트를 만들 수 있는 것이 능력 있는 주부의 조건으로 여겨질 정도로 주부들의 서양 레시피 요리가 유행일 정도였다.

이렇듯 요리 난이도야 한국보다 훨씬 수월하기는 했다만[44], 일본에서도 1권에 3,800엔 [45]으로 하루 일당의 56%[46]를 내야 살 수 있던 매우 비싼 책이었다. 전집은 1984년 한국에선 12일치 일당(전 10권), 1981년 일본에선 14.6일치 일당(전 28권)을 내야 겨우 살 수 있었으니 줄 다 웬만한 중산층도 부담감을 느낄 전집 가격이던 건 똑같다.[47] 거기다 당시 일본인 대다수가 '토끼장' 소리 들을 정도로 좁은 집에서 살았으니 사실상 The Good Cook 전집과 식재료, 조리기구 다 사놔도 애초에 조리할 공간 자체가 없었다.(...)

참고로 1984년 당시 일본의 1인당 GDP는 11,443.5달러로 세계 평균의 4.38배에 달했으며, 프랑스(9,312달러), 독일(9,347달러), 네덜란드(9,992달러), 핀란드(10,830달러)보다도 높고 덴마크(11,516달러), 룩셈부르크(12,127달러. 다만 말이 룩셈부르크지 1992년까지는 스위스가 룩셈부르크보다 더 잘 살았다), 아이슬란드(12,378달러), 호주(12,436달러)에 버금갔다. 한일 양국간 1인당 GDP 차이는 무려 4.6배였다.

결국 The Good Cook은 예기치 못하게 어쩐지 크리스탈 [48]과 함께 당시 한일 양국의 생활 격차를 보여준 서적으로 남고 말았다.

[1] Richard Olney, 1927~1999, 미국의 화가 출신 요리사.[2] 소책자 1권 제외 시. 참고로 미국판은 28권이다.[3] 일본어판에서 유일하게 번역이 불발되었다.[4] 원어인 영어, 아예 이 책의 무대격인 프랑스어, 완결 직후 번역본이 나온 일본어, 그리고 불명 언어로 추정. 1983년에야 한국에서 번역 출판된 걸로 보면 적어도 한국어는 아니다.[5] 1979년 당시 미국인 평균 일당이 31.45달러 정도였으니 미국인 일당의 47.6~54%에 달하는 고가의 책이던 셈이다.[6] 1977년부터 2000년까지 한국일보와 제휴관계를 맺고 타임라이프 책을 한국어로 번역 출간했다.[7] 당시 환율 기준 달러로 환산하면 약 14.5~15달러다.[8] 다만 서양 요리의 핵심인 '소스' 파트와 '어류와 갑각류' 파트도 날아가버렸다.[9] 당시에는 롯데쇼핑센터[10] 1976년 서울프라자호텔 건설 전까지는 미군 위락지 출신 워커힐 호텔(1973년 민영화, 1978년 신관 완공)과 (당시 기준)미국 국내선 항공사가 50% 지분을 가진 조선호텔 외에는 전무에 가까운 수준이었다.(반도호텔은 노후화로 1974년 철거됐으니 논외) 하얏트 호텔은 1978년, 힐튼 호텔은 딱 1983년 12월에 진출했으며, (반도호텔 터에 세워진) 롯데호텔 서울과 (영빈관에 세워진) 서울신라호텔은 모두 1979년에야 세워져 당시엔 4~5년밖에 안 된 신식 호텔이었다.[11] 롯데리아가 생긴 것도 1979년으로 당시 4~5년밖에 되지 않은 새 브랜드였고, KFC와 버거킹은 세계의 일품요리 번역 4개월 후에 한국에 진출했으며, 피자헛은 1985년에야 한국에 진출했는데도 너무 비싼 나머지 1980년대 후반에도 이탈리아 요리 식당으로 착각하는 사람도 있을 정도였다.[12] 그 외에도 마멀레이드도 네이버 뉴스 라이브러리에 마멀레이드, 마마레이드 라고 검색하면 1990년대까지도 진짜로 1년에 1번만 언급될까 말까한 수준이었다.[13] 저런 마당이니 정통 서양식 식당은 더더욱 귀했다. 한국 최초의 양식당 서울역 그릴 역시 냉정하게 보면 경양식 코스 식당 수준이었다. 그나마 호텔 식당을 논외로 하면 1983년 시점 파인다이닝으로 갈 만한 곳은 1967년 삼성본관에 세워진 라칸티나(심지어 이조차 이탈리아 요리 전문 식당으로 전환한것도 1982년이었다)와 1980년대 초반 (남편이 이탈리아인이던) 패티김이 서초동에 운영했던 '맘마미아'가 전부였다. 사실 과거 한국 상류층들 사이에서 요정이 유행했던 이유는 이처럼 한국의 파인다이닝 업계가 전멸에 가까운 수준이었기 때문이었던 것도 있다.[14] 당시엔 마가린이 더 널리 쓰였다.[15] 파슬리 등[16] 이 책에선 기본 전재(빵, 고기 로스트 등)였던 오븐 보급률도 이보다 나을 바 없었을 것이다.[17] 애초에 한국의 1인당 GDP는 (민주화가 성사된) 1987년에야 겨우 세계 평균을 넘겼고 이 전집이 현역으로 팔려나갔을 1984~1986년에는 세계 평균의 90%대로 오늘날의 중국, 말레이시아와 비슷한 포지션이었다. 심지어 세계 평균의 80%대를 넘긴 것도 이 전집 출간으로부터 고작 1년 전인 1982년이다.[18] 물론 외국인이 쓴 건 논외로 한 거다. 문서에서 설명한 The Good Cook 외에도 일본 グラフィック社(당시에는 GRAPH-SHA, JAPAN으로 알려졌다) 것을 한림출판사에서 번역 출간한 세계의 요리전집 7권 <효모빵•빵반찬•홈케이크>와 여성실기 비디오 강좌(총 21권) 중 21권 <(엄마가 만든 간식) 홈케이크>도 있다. 공교롭게도 셋 다 같은 1983년 나왔다.[19] 궁중요리의 대모로 꼽히는 인물이다.[20] 1937~, 당시 한양여자전문대 교수[21] 이것도 손쉬운 가정요리 카드를 표방하며 출판한 시리즈 중 하나였다.[22] 본책 32권 + 별책(가정요리수첩) 1권. 1권당 30개의 요리를 다뤘다. 풀컬러 사진은 기본에 황혜성, 한복려(韓福麗, 1947~, 황혜성의 장녀.)를 위시한 8명의 요리연구가가 집필진으로 참여한 것과 광고에서 '혼수감 1호, 주방기구 1호'라는 것을 강조하고 결정적으로 가격도 매우 쌌으니(1권당 990원에 전권 세트는 계량 컵세트와 주방용 철제 책꽂이까지 포함해도 The Good Cook 전집 1/4 가격, The Good Cook 3권보다도 훨씬 싼 고작 3만 원(1983년 평균 일당 약 8,617원이던 시절)이었다!) 출판 5개월 만에 330만 부(이는 총 판매량 기준으로, 전집 기준으로 보면 10만 명이 사갔다. 심지어 재외교포까지 사갈 정도였다.)가 팔려나가는 대히트를 거둬 1985년 요리 종류를 1200가지로 늘려 본책 8권+부록 1권(생활요리교실)으로 개정한 <러브쿠킹 1200> 시리즈라는 개정판을 내놓을 정도였다.[23] 전희정 저. 심지어 이는 <케이크•쿠키•페이스트리>를 책 제목만 바꿔 재탕한 수준이다.[24] 김경진(金璟鎭) 저. 심지어 이 책은 서양식 디저트라 해봤자 상대적으로 경양식 디저트 포지션의 가벼운 것들만 나오고 중간에 뜬금없이 한과가 나오기도 한다.(...)[25] 전술했듯 <케이크•쿠키•페이스트리>가 <엄마가 만드는 케이크와 쿠키>로, 그리고 <러브쿠킹 1200> 포함으로 재탕되었다.[26] 尹瑞石, 1923~, 중앙대학교 명예교수 역임[27] 鄭純子, 1921~1999, 단국대학교 가정대학 교수 역임[28] 전반에 프랑스 요리 관련 설명들이 나온다.[29] 심지어 전자는 요리사 교육용 교과서격(아예 제목에 '실무'가 들어갔다), 후자는 호텔과 레스토랑 참고용 레시피에 더 가까웠다.[30] 전술했듯 이조차 특별한 날에나 먹을 수 있었다.[31] 퓌레 수프, 브로드 수프(broth soup), 브레드 수프, 냉수프[32] 보일과 스팀, 프라이, 브레이즈, 스튜, 베이크, 그라탱, 그릴[33] 로스트, 그릴 ,프라이, 포치, 브레이즈. 돼지고기는 스튜, 닭고기는 소테도 다뤘다.[34] 생크림 케이크는 (중진국 초입기였던) 1977년 배우 남성훈이 (상위권 선진국 초입기였던) 일본에서 들여온 레시피로 '여명제과'를 만들면서 처음 들어왔다.[35] 옹근 달걀 요리, 옹근 달걀 요리의 배합요리, 푼 달걀 요리. 얼마 전까지만 해도 달걀프라이를 도시락에 넣어도 잘 사는 집 취급받던 시절이었다.[36] 원판이 27~28권이었는데 거기서 반토막이 났단 건 인터넷도 없던 시절의 한국인들에게는 전혀 알려지지 않았다.[37] 사실 세계의 일품요리를 위시한, 한국에서 번역된 타임라이프 전집 자체가 대개 좀 사는 집에서 책장을 채우는 장식용 도서의 용도로 구입한 사례가 많다.[38] 세이부 그룹과 계약을 맺었다.[39] 소책자 1권 제외 시[40] 일본 주택 구조 때문에 바비큐 같은 요리가 불가능해서 빠진 것으로 추정된다.[41] 1958년 제국호텔에 일본 최초의 뷔페 '바이킹'을 열었고(지금도 운영 중이다. 워낙 유명해져서 오늘날 일본에서는 뷔페를 '바이킹'이라고 부를 정도다), 1964 도쿄 올림픽 여자 선수촌의 총 조리장이었으며, 일본 정부로부터 2개의 훈장(황선포장(黄綬褒章, 1984), 훈사등서보장(현 서보소수장, 1994))과 프랑스 정부로부터 농업공로훈장 5등급(2000)를 받았다. 당연히 제국호텔 내 입지도 드높아 1969년 제국호텔 조리장에 오른 것을 시작으로(26년간 조리장 역임) 1970년 호텔 이사, 1982년 상무이사, 1990년 전무이사, 1994년 총요리장에 올랐다. 일본에서는 2006년 NHK에서 그의 인생을 다룬 드라마가 방영될 정도로 오늘날 한국에서의 후덕죽 이상으로 유명한 사람이라고 하는데, 굳이 따지자면 일본 내에서는 폴 보퀴즈/안성재의 권위에 고든 램지/백종원의 대중 인지도의 중간에 걸친 포지션이라고 보면 된다. 그의 제자인 미쿠니 세이조(三國清三, 1954~) 역시 (공식적 미쉐린 스타는 없음에도) 2015년 일본 요리사 중 유일하게 레지옹 도뇌르 5등급을 수여받은 권위와 유튜브 채널 구독자 55만 명을 기록한 대중성까지 다 갖췄다.[42] 대표적으로 디저트편은 제국호텔의 디저트 담당이었던 카토 마코토(加藤信, 1936~)가 감수했다.[43] 심지어 연회요리대전은 전집이 (평균 월급 25만 엔이던 시절) 20만 엔이나 되던 게 1989년까지 2년 동안 4쇄나 찍힐 정도로 잘 팔려(#) 1994년 8권짜리 개정판이 나왔다.[44] 심지어 한국어판과 일본어판의 베이스가 된 영국보다도 훨씬 수월했다.(...)[45] 당시 환율 기준 달러로 환산하면 약 17달러였다.[46] 1981년 일본 근로자 평균 월급이 20만 3,200엔이었다.[47] 참고로 1984년 일본 월급은 22만 8,900엔으로 책 한 권(당시 환율 기준 약 15달러)은 일당의 50% 미만, 전집은 13일치 미만(전 28권) 봉급을 내야 살 수 있었다.[48] 1981년 일본에서 인기를 끌자 한국에 해적판으로 번역되었는데 '우리 독자들이 공감할 수 없는 조잡한 3류 소설'이라는 혹평을 받았고 일본 언론에서도 해적판을 비판하자 소리소문없이 사라졌다.
