1.1. 조리도구

주로 무언가를 구워 먹을 때 사용하는 물건. 바비큐 등을 요리할 때 사용하는데, 워낙 이 이름에서 파생된 것들이 많다 보니 바비큐에 사용하는 그릴은 따로 Barbecue Grill이라고 한다. 그 쪽 그릴도 종류가 많다. 바비큐 문서 참조.
가스레인지와 복합형으로 나오는 경우도 있는데 이를 그릴 (가스)레인지라고 부른다. # 옛날에는 집집마다 자주 보이던 모델이었는데 어느 시점에서부턴가 아래 그릴이 붙어있는 경우가 줄어들고 그냥 가스레인지 단독형 모델이 더 늘어났다가 요새는 다시 보이고 있다. 이것의 강화형으로는 오븐형 가스레인지가 있다.[1] 2018년에 나온 그릴 레인지는 아래 그릴 쪽의 성능이 좋아졌다고 한다.[2] 대신 가격이 비싸다. #[3] 그릴은 조리가 오래 걸리고 한식과는 잘 맞지 않으므로 고작해야 생선구이 겸용 작은 그릴이 붙은 정도였는데, 그것마저 더 빠르고 낸냄새 적고 여러 가지 요리가 가능한 전열식 에어 프라이어의 등장으로 국내 주방가전에서의 입지는 거의 사라졌다. 전문 업체인 린나이에서도 (생선구이 겸용) 그릴신형은 찾을 수 없다.
한국에서는 왠지 석쇠와 동의어로 쓰이나, 엄밀히는 석쇠는 그릴에서 쓸 수 있는 불판중 하나, 즉 부속품일 뿐 그릴 자체를 의미하지는 않는다. 석쇠만을 뜻하는 영어는 grate이다. 그릴 전문 제조업체인 Weber에서는 음식을 올리는 석쇠를 쿠킹 그레이트, 숯이나 탄을 올리는 석쇠를 차콜 그레이트로 구분한다. 그레이트는 꽤 수명이 길기는 하나 소모품이므로 웨버 사는 따로 부품으로도 판매하고 있다. 그리들 griddle이란 말도 있는데 그릴과 거의 동이어이다. 다만 이 쪽은 석쇠라는 의미보다는 철판 쪽에 가까우며, 구멍이 전혀 없는 것까지 포함한다. 즉 우리 말 불판과 거의 동의어이다. 국내에서는 그리들로 검색하면 둥그렇고 구멍이 없는 두터운 철 또는 알루미늄제 불판이 나오는데, 이때는 그리들 팬(griddle pan)을 말한다. 국내에서 그렇게 상인들이 팔고 있어서 그랗게 의미가 좁아진 것이고 영어에서는 그리들이 꼭 그리들팬의 준말은 아니다. 금속판에 재료가 빠지지 않을 정도 긴 구멍이 나 있고 잘반은 막혀 있는 것, 둥그런 판 주변에마누그멍이 있고 가운데는 오목하여 국물 양념, 구울 때 나오는 기름이나 육즙이 모일 수 있는 것 등 모양은 아주 여러 가지이다. 주철제가 그 무거움에도 보온력과 무해함, 견고한 덕에 인기가 있고 값도 비싸다. 롯지 그리들은 롯지 팬만큼 유명하다. 웨버에서도 석쇠 (쿠킹 그레이트) 대신 또는 그 위에 올릴 수 있는 금속 그리들을 웍 세트(woknset)라는 이름으로 별매하고 있다. 이름은 웍인데 높이가 낮아 웍이라 하기 힘들고, 주철제라 너무 무거워서 웍질은 불가능하다.
1.2. 레스토랑 이름
그릴에서 직화로 구운 음식을 파는 식당을 그릴이라고 하기도 한다. 스테이크 등 구운 고기가 주 메뉴인 경우로 곳곳의 다이너에서 어렵지 않게 찾을 수 있다. 대한민국에서는 (오너 셰프가 존재하는) 개인 양식당에 그릴이라는 이름을 쓰는 경우가 그리 많지는 않고 호텔 양식당에 그릴을 붙이는 경우가 많았다. 당연히 프랑스 요리나 이탈리아 요리를 주 메뉴로 하는 식당과는 구성이나 스타일이 다르다.1.2.1. 서울역에 존재하던 레스토랑
서울역(서울 용산구 청파로 378[4])에 있던 한국 최초, 최고(古)의 레스토랑도 이름이 '서울역그릴'이었다. 1925년 경성역사의 구내 식당으로 개업했으며 일제시대 이후에도 오랜 시간 대한민국 양식당의 본류로서 이름을 떨쳤다. 과거에는 철도청[5]이 직접 운영했을 정도로 유서깊은 레스토랑이며 21세기에는 경양식을 중심으로 몇 가지 고급 서양 요리를 추가하는 쪽으로 운영했다.개점 당시에는 꽤 제대로 된 양식을 내놓았다. 당시 메뉴를 살펴보면 코스요리가 주였는데, 낮엔 수프부터 생선과 빵, 쇠고기와 닭고기, 후식으로는 아이스크림, 과일 파이, 푸딩이 나왔다. 밤엔 칵테일과 오트볼빵, 수프, 생선 혹은 감자, 쇠고기, 닭고기가 샐러드와 함께 나왔고, 후식으로는 과일과 커피 또는 홍차가 나왔다고 한다. 개점 초 가격은 3원 20전으로, 당시 15전에 불과하던 설렁탕의 21배에 달하는 수준이었다.[6] # 당시 쓴 식기가 은으로 만들었다는 것을 보면 얼마나 고급 레스토랑이었는지 알 수 있다. 일제시대에는 갑부, 고관대작 아니면 갈 수 없던 곳이다.[7]
문학 작품에도 등장하는데 이상의 소설 날개에서 주인공이 "돈이 없어 가지 못했다"고 처량하게 묘사되어 있다. 소설에 식당 이름은 안 나오는데, 같이 있던 커피숍 이름인 티룸은 나오므로 그것이 나중에 서울역그릴이 된 직영 양식당인 것을 알 수 있다.[8]
그릴은 해방 후 대한민국 철도청이 운영을 맡았다. 경양식이 고급 먹거리로 인기를 끌던 1970년대 ~ 1980년대에는 서울역뿐만 아니라 부산역, 동대구역 등 대도시 주요 역에도 분점을 개점했고, 1983년 더 플라자에 경영권을 넘긴다.[9] 더 플라자 버전 그릴은 1983년 7월 2일 영업을 시작했는데, 당시 시가 10,000원에[10] 7가지 코스요리가 제공되었으며, 서울의 양식당 중 제대로 된 프랑스식 정찬을 선보인 곳으로 평가받았다고 한다.
하지만 경양식이 쇠퇴하고 외환 위기가 찾아오면서 다른 역의 분점은 문을 닫고, 다시 서울역 그릴만 남게 되었다. 2004년 서울역 신 역사 건설과 함께 그 쪽으로 자리를 옮겨 신 역사 4층[11][12]에서 운영을 이어갔고, 그 사이 프라자 호텔도 경영에서 손을 뗐다. 그냥저냥한 경양식집들보다 좀 더 격조가 있지만 그렇다고 파인 다이닝처럼 진지하게 무거운 분위기는 아니었다.[13]
그러나 2020년 이후 코로나 사태 등으로 경영에 타격을 입었고,[14] 설상가상으로 전문 식당가의 리모델링이 결정되어 결국 2021년 11월 30일을 마지막으로 폐점하였다.[15] 경양식계의 이문설농탕이 될 수도 있었기 때문에 아쉬워하는 여론이 일부 존재한다. 존치했더라면 2025년 100년을 맞았을 것이다. 구 역사가 일부 노선을 다시 취급하면서 역 기능을 다시 하고 있지만 빈 공간에 노숙자가 모인다든지 종교 포교나 정치집회가 열린다든지 하여 관리가 어려운 상태라 뭔가 하여야 하는데, 그릴이 예전 자리에 부활할 가능성이 전혀 없는 것은 아니나 그렇게 하겠다는 소식은 없다.
잠실 롯데월드몰에도 서울역 그릴과 같은 '1925 서울역 그릴' 이라는 식당이 있지만, 이쪽은 개업 당시에는 다른 이름을 걸고 장사하던 곳으로 진짜 그릴의 역사와는 관계가 없다. 음식 종류와 형태도 오리지널 그릴 비슷한 게 나오긴 하지만 사실상 유사품이다. 이 쪽은 주로 원 팬 메뉴[16]를 취급해서 서울역 시절의 정찬 코스요리를 기억하던 사람들은 "이건 그릴이 아니다."라는 이야기를 듣는 경우도 많다.
구 서울역사 이전 시에 철거된 서울역 그릴의 오래 된 가구와 식기, 집기는 한동안 없어진 줄로 알고 열심히 찾고 있었는데, 의왕역 앞 철도박물관에 멀쩡히 전시되고 있던 사실을 나중에야 알게 된 일도 있다.
