1. 개요
기존의 덮밥에서 단순하게 밥만 죽으로 바뀌는 형태가 아닌, 생쌀을 볶아 육수를 가미해 식감과 풍미를 살린 볶음죽에 고기와 8가지 채소의 토핑을 곁들여 먹는 퓨전 요리로, 중화 요리의 누룽지탕과 형태가 비슷하다. 백종원의 골목식당-포항 꿈틀로에 출연한 ‘더신촌스덮죽’ 음식점의 최민아 사장이 소라와 문어, 시금치와 소고기를 조합한 두 개의 메뉴를 개발하며 ‘덮죽’이라는 이름을 붙였고, 이 방송을 계기로 토핑을 올려먹는 죽 형태가 일반인들에게 ‘덮죽’이라는 용어로 알려지게 되었다.죽에 재료를 토핑해 먹는 방법 자체는 이미 개발되어 있었다. 이런 형태의 음식이 소수의 음식점에서 이미 판매되고 있었으며, 죽 프렌차이즈인 본죽에서 최소 2018년부터 죽에 토핑을 올려먹는 메뉴를 판매했던 기록이 있다. 하지만 백종원의 골목식당에서 최민아 사장의 음식이 맛으로 호평받기도 하고, ‘덮죽’이라는 이름에 대한 상표권 분쟁과 표절 시도가 따르는 등의 사건사고로 인해 이슈몰이를 하면서 같은 형태의 음식들이 ‘덮죽’이라는 이름으로 보통명사화될 가능성이 높다.
2. 종류
2.1. 소문덮죽
생쌀을 볶아 채수를 가미해 식감과 풍미를 살린 볶음죽에 소라와 돌문어, 여러 가지 채소의 토핑을 곁들여 먹는 덮죽 요리 중 하나.
매운 맛이 특징. 경상북도 포항시 죽도시장에서 갓 잡아온 신선한 소라와 돌문어에서 우려난 국물맛이 일품이고 향도 강하다. 하지만 어린이들이 먹기에는 매운 편. 올려진 죽과 토핑을 섞지 말고 올려서 먹으면 더 맛있다.
2.1.1. 조리법
방송에서 공개된 조리법은 다음과 같다. 양파와 당근, 표고버섯을 넣어준다. 수분이 많은 재료는 기름에 튀겨지게 하는 것이 좋다.양념은 파기름에 썬 마늘 홍고추, 쪽파, 채소 등을 넣어준다. 이들을 강한 불에 넣어주고 저어주면 양념이 만들어진다. 그 후 죽에다가 돌문어와 소라를 곁들어서 만들면 완성이다.
